Cabbage & Peanut Salad

2 cups thinly sliced and
   chopped red cabbage
2 cups thinly sliced and
   chopped green cabbage
1/4 cup thinly sliced green
   onions or a bunch of chives
   chopping into small pieces
1/2 cup roughly chopped fresh
   mint, or basil leaves, or a
   combination of herbs (what-
   have-you?)
1/4 cup chopped peanuts

Dressing
2 tsp. minced garlic
1 tsp. hot sauce (or more, to
   taste)*
3 tablespoons rice vinegar (not
   seasoned)
1-2 tablespoons soy sauce*
2 tablespoons Tahini, almond
   butter, or peanut butter
2 tablespoons olive oil
2 tablespoons toasted sesame oil


  • Combine dressing ingredients, then taste to see if you want to add the second tablespoon of soy sauce* or more hot sauce*. 
  • Chop cabbage and green onions (easiest in a food processor) and combine in a bowl large enough to toss with dressing. 
  • Toss the cabbage-onion mixture with desired amount of dressing.  Note:  This and the below steps should be done just shortly before serving.
  • Wash & dry herbs, then roughly chop.
  • Add fresh chopped herbs and peanuts and toss again.
