Carrot Cake & Frosting

Carrot Cake

1 cup sugar
1 tsp salt
1 cup oil
4 eggs
2 cups flour
1 1/2 tsp baking soda
2 tsp. cinnamon
1/4 tsp nutmeg
1 1/2 cups grated apple
2 cups grated carrot
1 cup raisins pre-soaked in boiling water
1/2 cup chopped pecans

Preheat oven to 350 F or 180 C. All mixing can be done with a fork. Mix sugar, salt, oil & eggs. Add flour, baking soda, cinnamon & nutmeg. Mix again. Add apple carrot, raisins and pecans. Mix some more. Pour into greased & floured bunt pan and bake for 1+ hour until done. Cake is done when toothpick inserted in the middle comes out clean.

Carrot Cake Frosting

1 8 oz. pkg. cream cheese
4 tablespoons of butter
1 cup confectioners sugar
1 cup chopped pecans
2 teaspoons vanilla extract

With mix master cream together butter & cream cheese. Add sugar and mix well. Add vanilla and mix. Add broken pecans & mix with fork.
