Cinnamon Pecan Streusel Cheesecake Bars

Cinnamon Pecan Streusel
¼ cup sugar
¾ teaspoon vanilla
⅓ cup flour
2 tablespoons butter
½ teaspoon cinnamon
½ cup pecans chopped

Bar Base
½ cup butter, softened
¼ cup sugar
1 egg
1-1/4 cup flour
pinch salt

Cheesecake
2 8 oz. packages cream cheese
⅔ cup sugar
2 eggs

  • Preheat oven to 350 degrees.
  • Cinnamon Streusel - In a small bowl stir together sugar, vanilla and flour. Cut in flour. Stir in cinnamon and pecans and set aside.
  • Bar Base - In a medium sized bowl, using an electric beater, cream together butter and sugar. Add egg and mix until combined. Stir in flour and salt until just combined. Press into an even layer in greased 9x13 pan. Bake for 15 minutes.
  • Cheesecake - Cream together cream cheese and sugar. Add eggs and mix until combined.
  • Pour over bar base and bake for 20 minutes. Top with Cinnamon Pecan Streusel.
  • Turn oven off and prop door open 1" and let bars cool for 15 minutes.
  • Let cool for 30 minutes before putting in fridge to complete cooling for at least two hours before serving.
