Fried Scandinavian Cookies

1-1/2 cups flour
1/2 teaspoon baking powder
1/4 tsp salt
3 egg yolks
1/3 cup white sugar
3 tablespoons heavy cream
1/4 tsp crushed cardamon seeds
fat for deep frying
icing sugar

  • Mix flour, baking powder & salt.
  • In separate bowl beat egg yolks until thick & light
  • Add sugar & cream, beat well
  • Stir in seeds then mix dry ingredients into wet ingredients
  • Roll out about 1/3 at a time on lightly floured board at 1/8" thickness
  • Cut into 1-1/2 inch strips
  • Cut strips into 3" lengths
  • Cut a slit down the centre of each strip & pull one end of strip through it so you have a twist
  • Put into fat (390 F) and cook until lightly brown - don't overcook - only cook 3 at a time
  • Drain on absorbent paper
  • Cool
  • Sprinkle with sifted icing sugar
