Welsh Cakes

2 cups flour
Pinch of salt
2 teaspoons baking powder
1/2 cup currants
1/2 cup white sugar

1/2 cup shortening
2 eggs (beaten)
1 teaspoon vanilla
Milk as required (see below)

Mix dry ingredients, then mix the rest of the ingredients into the dry ingredients except not all the milk. Add milk as required (see below).

You can make this two ways; either you can add enough milk to make it like pancakes and fry them in a frying pan, or you can add no milk and make them like biscuits which I then pat out and cut with a glass and then bake in the oven on a prepared pan.

I like them like biscuits better but sometimes frying them just comes in handy and either way they're really good warm with butter on them and not bad cold either!
