Potato Chip Cookies

1 cup butter (softened)
1/2 cup sugar
1½ cups flour
1 tsp. vanilla
3/4 cup crushed potato chips
   (Note: Crush chips in a bag
   with your hand, but be sure
   to crush very well)
Powdered sugar

  • Using an electric beater, beat butter until light and fluffy - at least 10 minutes or more. 
  • Then add sugar and beat well. 
  • Add vanilla; then flour gradually. 
  • Add crushed potato chips last.
  • Drop by scant teaspoon onto cookie sheet.  
  • Bake in 350° oven until slightly brown (10 - 15 minutes). 
  • Sprinkle with powdered sugar while still warm.
  • Cookies actually taste better the 2nd or 3rd day after baking.
